Project Cheshire is an experiment in kitchen logistics, a pop up restaurant, and the mad brainchild of a hyperactive and aggressively gregarious cat-herder (project manager) based out of Boston, Massachusetts.
Project Cheshire attempts to source as many ingredients locally as possible and supplements with free range sustainably raised and 'remnants' from an extensive network of restaurant contacts, farm contacts, and anyone else who will give the Proprietress the time of day. It's not just the ethos, but also the desire to deliver a high quality haute cuisine dining experience and to bring all the min-maxing number madness of the day job to bear on kitchen resourcing.
